Professional forager Fergus Drennan spends up to 40 hours a week scrambling through woodland or picking his way across shingle beaches, gathering an enormous variety of wild food from the English countryside. Drennan sells produce at a local farmer’s market in Canterbury and runs foraging courses all-year-round for small groups of four people.
